Our unique roastery is based inside the walls of Aylesbury Prison and is the heart of Redemption Roasters. As well as being our production centre, the roastery is also our raison d’etre. It’s where we transform cohorts of up to ten young offenders at a time into specialty coffee industry professionals. They learn on the job, equipping them with the real skills they need to work in a cafe or roastery on the outside. Located in an old prison staff mess, the facility comprises three distinct zones, each of which form part of our apprentices’ ‘rotation’.
The Training Zone - featuring a Faema E61 training machine and grinders, this is our apprentices’ first port of call. New apprentices are trained by our staff, as well as their more advanced peers, in the basics of espresso, filter and milk. Only when apprentices have met the required standard here are they allowed to move on to other zones.
The Service Zone - at the front of the roastery, we run a small cafe which serves the prison community and visitors. Staffed by our apprentices, this zone teaches valuable customer service skills and gives them the opportunity to learn how a ‘live’ cafe works. For many of our young men, who have never been in a working environment before, this is their first taste of what it feels like to operate in a business team and communicate with patrons, a supervisor and each other. Crucially, it’s also a chance to hone their barista skills so they can impress potential employers on the outside.
The Roasting Zone - this zone houses our roaster, a Petroncini Speciality TT 20 PR. Here, we devise, roast and test each and every batch of our coffee, ensuring we hit the perfect notes every time. Uncompromising quality is always assured by our head roaster, Harry Graham, a tireless pursuer of excellence, complexity and consistency. Our apprentices progress to the roasting zone after demonstrating exceptional aptitude and commitment. From weighing, blending, bagging, labelling and packaging, they progress to increasingly more complex duties, culminating in actual roasting under the supervision of Harry.

Here, we serve our full range of espressos, single origin/estate filters (V60, Aeropress and batch brew), retail beans and home coffee accessories. Alongside the usual pastries, cookies, cakes and brownies, we have recently launched a simple food menu, making it a great spot for a light snack or a bit of brunch to accompany your coffee.
For slinging shots, we have a spanking new Slayer Steam. Affectionately known as Sally, she's one of only a handful of Steams in the UK. She's paired with Mahlkönig K30 Vario and EK grinders.
Beneath the cafe, the lower-groud floor houses our offices.

Specialty coffee should be accessible and shared among the community. We want to empower people to take their own coffee journey, be it opening a chain of coffee shops or just at home in the kitchen. Our coffee school allows us to share industry-level coffee knowledge outside the prison walls with the public and our wholesale clients.
To build our training centre, we have partnered with The Art of Coffee, part of the Speciality Coffee Association (SCA). With an array of courses and bespoke packages available, there’s something for everyone, whatever level you’re at.
